Minimum requirements for staff training
The Australian Food Standards Codes requires supervisors and every food handler to have both skills and knowledge about food hygiene and food safety matters.
This is the default position in FSANZ Code 3.2.2 that applies to every food business no matter what sector, product or size of business.
Apart from this specific clause that states all food handlers must be skilled and knowledgeable about food safety, there are specific concepts and tasks that food handlers must be trained in, such as prevention of food contamination, health responsibilities and personal hygiene requirements.
There are also specific training requirements in other standards and schemes include HACCP principles and applications, HACCP refresher, food safety supervisor, internal auditor, product labelling, product recall and allergen management.
